Mi-so love this recipe because it’s quick and easy to make for a weekday dinner. This dish is bursting with umami and it’ll make you crave for more.
INGREDIENTS:
- A handful of spaghetti (boiled)
- A tablespoon of butter
- 5 cloves of minced garlic
- A small bowl of sliced shitake mushrooms
- A generous tablespoon of miso paste
- 3 tablespoons of japanese sweet sauce
- 2 tablespoons of rice vinegar
- Salt & sugar to taste
- 1/4 cup of grated parmesan cheese
- Thinly sliced leek (for topping – optional)
HOW TO COOK:
- Boil spaghetti in a pot of slightly salted boiling water until al dente. Reserve one cup of pasta water and set aside.
- In a pan, melt butter and toss in your minced garlic. Stir-fry until slightly brown.
- Add in your sliced shitake mushrooms. Stir-fry until golden brown.
- Pour in your pasta water, miso paste, japanese sweet sauce and rice vinegar. Mix until well incorporated and the sauce is slightly thick.
- Toss in your cooked spaghetti and stir until pasta is well coated with the miso sauce.
- Sprinkle your grated parmesan cheese and stir until the cheese has melted.
- Serve immediately in a bowl, top with thinly sliced leek.
