When life gives you lemons, make Pasta Al Limone. This dish feels like a warm comforting hug for me. It was my go-to recipe back in my uni days because of how quick, easy and delicious it was.
INGREDIENTS
- Two handfuls of spaghetti
- 3 tablespoons of butter
- 5 Cloves of minced garlic
- 1/2 cup of lemon juice
- 1 teaspoon of lemon zest
- 1/2 cup of freshly grated parmesan cheese
- Salt, sugar and black pepper to taste.
HOW TO MAKE IT:
- Boil your spaghetti until al dente. Reserve 1-2 cups of pasta water.
- In a pan, melt your butter and sauté the minced garlic until they’re brown on the edges.
- Pour in your lemon juice, lemon zest and pasta water. Season with salt and sugar and let it simmer.
- Toss in your boiled spaghetti, making sure every pasta strand is coated with the lemon sauce before seasoning it with a little bit of blackpepper.
- Sprinkle in your parmesan cheese and mix well until the cheese has melted.
- Garnish with your topping of choice e.g black pepper, chives or lemon zest (optional) and serve immediately.
