Peaches have got to be one of my favourite fruits – fresh or canned, they taste beautiful either way, especially when turned into a nice and heartwarming peach crumble. Make it fresh or freeze it ahead of time and bake before a potluck – this recipe is one to have up your sleeves.
INGREDIENTS:
Crumble Mix
- 150g Plain flour
- A pinch of salt
- 150g brown sugar
- 2 tbsp Cinnamon powder
- 75g dry oatmeal
- 200g butter (cold & diced)
Peach Filling
- 2 Large cans of peaches (with syrup drained) – I used a canned peach weighing 800g/can (before syrup removal)
- 1/4 cup Brown sugar (you can adjust based on sweetness preference)
- 1 tbsp Cinnamon powder
- Juice of 1/2 a lemon
HOW TO MAKE IT:
- In a food processor, blend all ‘Crumble Mix’ ingredients until crumbles are formed and set aside. If you don’t have a food processor, mixing it together using your hand is totally fine!
- Slice your peaches (size is up to personal preference) and place in a 6-7 inch baking dish/cake pan and add in the rest of the ‘Peach Filling’ ingredients. Mix well until all peach slices are coated.
- Top the peach filling with your crumble mix.
- Bake in the oven for 40-45 minutes or until crumble top is golden brown and peach filling is oozing out at the corner sides.
- Serve warm as it is but this peach crumble is divine with a good scoop of vanilla ice cream or custard sauce.
