I love a good simple fried rice like those garlic fried rice you eat at Japanese/Korean eateries. I just had to remake my own at home and it’s so quick and easy to make for your weekday dinners. Have it with a side of sliced grilled beef or chicken for a complete meal.
INGREDIENTS
- 3 cups of day-old cooked white rice (I use Jasmine rice)
- 50g of butter
- 4 tablespoons of sesame oil
- 3-4 tablespoons of minced garlic
- 1/4 cup of oyster sauce
- 1 tablespoon of soy sauce
- 1/2 cup (or more) of chopped spring onion
- Salt and sugar to taste
- Crispy garlic chips (optional topping)
HOW TO MAKE IT
- Cook 3 cups of white rice in a rice cooker and keep it overnight. You can also pre-cook the rice on the same day.
- In a pan, melt your butter, add in sesame oil and sautee your minced garlic until garlic is slightly brown on the edges.
- Add in your oyster sauce and soy sauce and stir-fry well. Season with salt and sugar accordingly.
- Toss in cooked rice. Mix well until rice is well-coated.
- Add in chopped spring onion and mix well.
- Serve immediately, topped with crispy garlic chips and more chopped spring onions (optional)
Tip: To make crispy garlic chips, thinly slice each garlic clove of a whole bulb of garlic and coat lightly with corn flour. Fry in hot oil until golden and crispy. Dry and cool on a paper towel before storing in an airtight jar or for immediate usage.
