Napolitan/Naporitan Pasta or simply “ketchup pasta” piqued my interest because I saw it in animes or on the menus of western eateries in Japan. This western-Japanese fusion pasta was supposedly originated from Yokohama and I love how very little ingredients you need for this recipe. The original Napolitan Pasta calls for capsicum as a source of vegetables but I decided to omit that as I’m not the biggest fan of capsicums.
INGREDIENTS
- 2 Handfuls of spaghetti (boiled till al dente with 1 cup of pasta water reserved)
- 50g Butter
- One whole brown onion (diced)
- 1 tbsp minced garlic
- 6 sticks of hot dog sausages (sliced into small pieces)
- 1 & 1/2 cups of ketchup
- Salt and sugar to taste
HOW TO MAKE IT
- Boil spaghetti until al dente and reserve 1 cup of pasta water. Set aside.
- In a pan, sauté diced onion and minced garlic until fragrant and onion is translucent.
- Toss in sliced sausages and sauté until sausages are slightly brown and crispy on the edges.
- Add in ketchup, season with salt and sugar and let it thicken and caramelize for 6-8 mins.
- Toss in cooked pasta with pasta water and mix well until sauce has thickened and every strand of spaghetti is coated with the ketchup sauce. Serve immediately.
