I like my Ayam Masak Kicap (or simply Fried Chicken cooked with Soy Sauce) simple and uncomplicated, just as how life should be. I learnt how to make this when I was really young because it is truly simple to make and oh so delicious with a side of rice.
INGREDIENTS
- 8-10 pieces of chicken (I use only thighs and drumsticks)
- 3-4 tsp turmeric powder
- 1 tsp salt
- 2 large potatoes (thinly sliced)
- Oil for deep-frying
- 2 large onions (roundly sliced)
- 5 cloves of chopped/minced garlic
- 1 & 1/2 cups of sweet soy sauce (I use the brand Habhal’s Sweet Soy Sauce)
- Sliced chives/spring onions (optional)
HOW TO MAKE IT
- Marinade chicken pieces with turmeric powder and salt. Deep fry for 15 mins or until chicken pieces are cooked and the skin is golden and crispy. Set aside.
- In the same oil, deep fry thinly sliced potatoes until golden and crispy. Set aside.
- In a wok, heat up 1-2 cups of oil (you can re-use the same deep-frying oil) and sauté sliced onions and minced garlic until fragrant and slightly brown on the edges.
- Toss in fried chicken pieces, potatoes and soy sauce. Mix well until soy sauce has slightly caramelised.
- Add in chopped chives/spring onions. Mix well and serve immediately with a side of rice.
