One of my 2025 resolutions is to support more local brands. Malaysia has a good pool of local food brands and one that stood out to me is Daerah Salai – a new ready-to-cook brand that specialises in Daging Salai Masak Lemak (Smoked Beef cooked in Spicy Coconut Milk). It’s divine when cooked as instructed but I loved it so much I decided to make my own rendition with a pasta dish.
INGREDIENTS
- 1 Daerah Salai Daging Salai Masak Lemak (regular pack) – you can purchase here
- 2 handfuls of Spaghetti (boiled till al dente)
- 1 mug of pasta water
- 2-3 Tbsp Olive Oil
- 200ml cooking cream
- 1 handful fresh turmeric leaves (thinly sliced)
- 1/2 cup of grated parmesan cheese
- Salt and sugar to taste
HOW TO MAKE IT
- Boil spaghetti until al dente. Drain and set aside 1 mug of pasta water.
- In a pan, heat up 2-3 tablespoons of olive oil and sautee half (90g) of the provided Daging Salai in the pack for 7-10 mins on medium heat or until crispy. Take it out of the pan and set it aside to cool.
- In the same pan, sautee the provided Masak Lemak paste until fragrant and add in the remaining Daging Salai (90g) provided in the pack. Mix well.
- Add in cooking cream, pasta water, salt and sugar. Simmer until sauce has slightly thickened.
- Toss in cooked spaghetti and mix well, making sure every pasta strand is coated with the sauce.
- Add in sliced turmeric leaves and parmesan cheese. Stir until cheese has melted.
- Thinly slice the crispy Daging Salai earlier and use it as a topping for your pasta. Serve immediately.
