Growing up, we’d buy a box of fortune cookies at the grocers during Lunar New Year season and my siblings and I would just crack open each cookie to read our fortunes. I loved it so much, my childhood friend Iman, and I, would attempt to make them ourselves and it became a little after-school project.
I always smile looking back at my childhood memories so I just had to share this fortune cookie recipe. I can’t quite remember where (or how) we got it – must’ve been from the olden days of the internet but I’m glad I managed to write it down in my old diary. This recipe makes around 12 fortune cookies.
INGREDIENTS
Wet ingredients
- 2 egg whites
- 1 tsp vanilla extract
- 1/3 cup vegetable oil
- 1/4 cup water
Dry Ingredients (Sifted Together)
- 1/2 cup all-purpose flour
- 1 tsp cornstarch
- 2 1/2 Tbsp rice flour
- 100g Castor Sugar
- 1/2 Tsp Salt
HOW TO MAKE IT
- Preheat the oven to 170 degree celcius and prepare a baking tray lined with a baking paper.
- Hand whisk all the wet ingredients together until you get a foamy batter. Note: Please make sure ingredients are at room temperature.
- Sift together all the dry ingredients.
- Add half of the dry ingredients into the foamy batter and mix gently. Add in the remaining half of the dry ingredients and mix again until well combined.
- Trace 3x circles with a 9cm diameter on the baking sheet making sure each circle is well-spaced apart.
- Using a tablespoon, pour 1x tablespoon of batter into each circle and spread it out evenly to fill in each circle.
- Bake in the oven for 8-10 mins or until the rounded edges are golden brown.
- After each batch is done baking, immediately remove them from the oven and flip each cookie with a thin spatula. Quickly place your fortune cookie message strip in the center of the cookie, and fold it into two to form a semi-circle, enclosing the message strip. Place your semicircle onto the edge of a glass, and quickly fold the ends down, to shape it into a fortune cookie shape. Note: I’d highly recommend you doing this with gloves as the cookies will be super hot.
- Place the cookie in a muffin pan so it holds its shape while it cools down.
- Store in an airtight jar to ensure long-lasting freshness and crisp!
