My earliest memory of egg tofu was seeing my Mom fry slices of them in the kitchen for dinner. I’d always steal a piece or two because it was just too good! My rendition of a Fried Egg Tofu dish is complemented by the saltiness of the dried shrimps, sweetness from the sautéed onions, and a little heat from the chili flakes – absolutely easy to make and delicious with white rice!
INGREDIENTS
- 3 tubes egg tofu (each tube weighs 120g)
- 1-2 cups corn flour
- Cooking oil (for frying)
- 1-2 Large Onions (sliced)
- 3-4 cloves of garlic (finely chopped)
- 1 tbsp dried shrimps (rinsed & soaked in hot water to soften for 10 mins)
- 2 tbsp chilli flakes
- A pinch of salt (mind the quantity as the dried shrimps are already salty)
- Sugar to taste
- Spring Onions (thickly sliced) – optional
HOW TO MAKE IT
- Slice each tube of egg tofu around 2-3cms per piece.
- Coat your egg tofu pieces in cornflour. Make sure each slice is well-coated.
- Heat some oil in a non-stick pan and fry your egg tofu for 6-7 mins or until crispy and golden brown, making sure to flip each slice to ensure an evened crisp. Cool on a kitchen towel covered plate.
- Using some of the same oil used to fry your egg tofu, sauté your onions, garlic, dried shrimps and chili flakes until fragrant. Season lightly with salt and sugar.
- Toss in thickly sliced spring onions (optional) and your fried egg tofu. Mix well until every egg tofu is coated with the onion/dried shrimps/chili flakes mix.
- Serve immediately with white rice.

PRO TIP:
- If you’d just like to enjoy plainly fried egg tofu without the frills of onions, garlic, dried shrimps and chili flakes – just add some salt and garlic powder to the corn flour before coating your egg tofu slices. Fry as per recipe.
