I have a deep love for noodles and this Peanut Butter Noodle is so dreamy to have on days you need something quick and easy to eat. If you love peanut butter, take it up a notch with this savoury recipe.
INGREDIENTS
- 1 Packet of Noodles (I use Pan Mee Noodle weighing 20g/packet)
- 1 Tbsp smooth peanut butter
- 3 Tbsp Sesame Oil
- 2 Tbsp Soy Sauce
- 1 Tbsp Rice Vinegar/Normal Vinegar
- 1 Tsp Chili Flakes
- 1/4 Cup boiling water
- Salt and sugar to taste (if necessary)
- Finely sliced spring onions/coriander leaves (optional topping)
HOW TO MAKE IT
- In a bowl, mix together peanut butter, sesame oil, soy sauce, vinegar, chilli flakes and boiling water until a smooth sauce forms. It’s ok if your sauce is a little runny, it’ll thicken once absorbed by the noodles. If you prefer drier noodles, lessen water measurement.
- Cook your noodle of choice according to packet instructions. Once done, toss into peanut butter sauce. Add salt and sugar if necessary. Feel free to adjust based on flavour preference.
- Serve immediately topped with sliced spring onions/coriander leaves.
