I enjoy simple pastas the most – olive oil, garlic, salt and pepper, I’m in! The best “girl-dinner” ever. But when you add butter to the equation? YUM.
Back when I was in corporate, I was having lunch at a bistro with a dear ex-boss of mine who was in town for a holiday with her little family. She’s potentially my favourite German ever with an unhinged German sense of humour. During lunch, she said to the waiter with a straight face: “Can I order a plain pasta with just butter for my son please?” It wasn’t in the menu so the waiter had to double check (as if he was a little confused and unsure) if that was truly what she wanted – for context, it is Malaysia and we do love our flavours and sauces, haha!
Awhile after, this beautiful plate of pasta with just butter was served and I couldn’t take my mind off of it since. I knew I had to re-make it. Only this one isn’t pasta with just butter like the one my ex-boss ordered at that bistro, but it is still simple enough for the butter and pasta flavours to shine through.
INGREDIENTS (SERVES 2 OR 1 HUNGRY PERSON)
- 200g Pasta (boiled until al dente with 1-2 mugs pasta water reserved)
- 100g Butter
- 1 Tbsp Minced Garlic
- 1/4 Cup Grated Parmesan Cheese
- Salt and Pepper to taste
- Finely chopped fresh chives (optional topping)
HOW TO MAKE IT
- Boil pasta in a pot until al dente. Reserve 1-2 mugs of pasta water. Set aside.
- In a separate pan, melt butter and saute minced garlic until fragrant. Be careful to not brown your garlic.
- Pour in 1 mug of pasta water first, season with salt and pepper, and toss in cooked pasta. Mix well. Gauge if you need more pasta water and add accordingly – this depends on how saucy you want your pasta to be.
- Sprinkle in grated parmesan cheese and mix well until cheese has melted and pasta is well coated with butter sauce.
- Serve immediately, topped with chopped fresh chives and more grated parmesan cheese (optional).
