I love a good cous cous salad but this one takes it up a notch with its vibrant, summery flavours. Super easy to make and is delicious eaten as a side with grilled chicken or on its own if you’re craving something sweet, fresh and light!
INGREDIENTS
- 1 and 1/2 Cups Cous Cous – cooked as per packet instructions
- Half a mango – diced
- 1 sprig Mint Leaves – finely chopped
- 1 sprig Coriander Leaves – finely chopped
- 1/2 a Red Onion – diced
- 1/2 Red Chili – diced (remove seeds to make it children friendly)
Salad Dressing:
- 1/4 cup olive oil
- 2 tsp lime juice
- 1/2 teaspoon cumin powder
- 1/2 tsp honey
- Salt and blackpepper to taste
HOW TO MAKE IT
- Place cooked cous cous, diced mangoes, finely chopped mint leaves and coriander leaves, diced red onion and diced chili in a bowl.
- Mix together all the salad dressing ingredients and stir until salt has dissolved.
- Pour salad dressing into the salad bowl and mix together until everything is well combined.
- Top with mint leaves (optional) before serving. This salad is best served with a side of grilled chicken/fish.
